There's no way to do what you've specifically asked for but by changing the shading limits applied and number of colours used you can get close.
To change the shading limits applied:
- Turn on the Details section in the Selected Variables List.
- You can then set the Lower and Upper ...

When you run the Solar Exposure Analysis does it return zero hourly/percentage results for that part of the roof as well?

Have you looked at VistaPro Custom Variables?
You can use 'Number of People' to filter the variables.

Right now the only way to analyse the ground on it's own would be to change the object type or add a room like you mentioned.
Changing the ground to a room, and your buildings to shades would achieve what you're looking for.
Being able to analyse ground exposure is something we're hoping ...

As Ross mentioned the value you are after can be obtained using Custom Variables.
The mean can be calculated using:
AVG(IF(B>0,A,NAN))
The minimum can be calculated using:
MIN(IF(B>0,A,INF))
and the maximum can be calculated using:
MAX(IF(B>0,A,-INF))
Where A is 'Air ...

To get the results you require you have to tick on 'Surface temperatures' and select the rooms you want detailed output for.
