I am new to IES and struggling to find out how to insert a chimney into my model.

Does anyone have any advice?

Dear Jen,
First of all , welcome to IES group.
You can draw a chimney like you draw the room & you can put the openings at both the end.
If you want to use this chimney for thermal analysis you should define this as a local shades & if you want to use this for MicroFlo/CFD then you should defind this chimney as a room.

There are few videos on SketchUp website which shows how to draw a chimney on the roof. Hope that will give you a clear idea.
